This is the original recipe I adapted from Six Vegan Sisters:
Vegan Friendly Chocolate Chip Cookies:
1.25 cups all purpose flour
1 teaspoon cornstarch
.5 teaspoon baking soda
.5 teaspoon salt
.5 cup butter alternative
.5 cup light brown sugar
.25 cup granulated sugar
1 teaspoon vanilla
.25 cup plant milk
.5 cup mini chocolate chips
- Preheat oven to 350ยบ
- Whisk dry ingredients
- Cream butter and sugars in a separate bowl
- Add vanilla
- Slowly add half of dry ingredients to wet and mix until incorporated
- Add plant milk and mix until incorporated
- Add remaining dry ingredients and mix until incorporated
- Stir in chocolate chips
- Use a tablespoon to measure out equal scoops of dough and roll into balls
- Place dough balls a couple of inches apart on lined cookie sheets
- Bake for 5-6 minutes and then rotate pans and bake for an additional 5-7 minutes until golden brown
- Allow to cool completely before storing
- Store at room temperature
* Makes 32 cookies *
